A bit about us

Sim Trava was formed in 2005 by Simon and Tracy Vardy from the basement of their Altrincham home, and their first store opened that same year on October 17th in Northwich, Cheshire. The original plan was to open 5 stores in 5 years, however that milestone was achieved much sooner and by 2010 we had 10 Costa Coffee stores in and around the Cheshire/Manchester area.

Fast forward to 2021 when we celebrated our 40th new store opening in Fallowfield, Manchester. Following this Sim Trava was honoured to be selected to be the first franchise to purchase existing stores from equity. We acquired 17 stores, located across the Preston, Blackpool, and Southport region. In 2025 Sim Trava expanded again with the purchase of 21 existing stores from a franchise partner bringing our store count to 80, and we have no plans to slow down.

For any reasonable adjustments and general queries please

*This role is for a store owned by one of our franchise partners, their hiring process, salary and benefits may vary from those within a wholly owned Costa store advert.

STAR answer examples

Model answers using the Situation-Task-Action-Result framework. Adapt to your own experience.

1Question

Tell me about a time you had to work quickly under pressure without compromising quality.

Situation: During a Saturday morning rush at a 60-cover café, our team was down one member due to a last-minute absence. Task: I needed to cover both the coffee station and the till simultaneously while keeping wait times under three minutes. Action: I reorganised the workflow, batching similar drink orders together and communicating clearly with the remaining colleague on food prep. I also set out cups in advance to reduce turnaround time. Result: We served 45 customers in the first hour without a single complaint, and my manager noted the queue had cleared faster than on a typical fully-staffed Saturday.
2Question

Describe a situation where you turned a dissatisfied customer into a happy one.

Situation: A regular customer received a latte that was noticeably cooler than she preferred, and she returned to the counter visibly frustrated. Task: I needed to resolve her complaint quickly without disrupting the queue behind her. Action: I apologised sincerely, remade her drink immediately at the correct temperature, and added a complimentary slice of cake to acknowledge the inconvenience. I also noted her preference on our regular-customer sheet for future visits. Result: She thanked me warmly, stayed to finish her drink, and mentioned us positively in a Google review that week, helping lift our store rating from 4.2 to 4.4 stars.
