1Question

Tell me about a time you worked in a high-pressure kitchen environment

During the Christmas period at a busy restaurant, we faced a 40% increase in covers with the same staffing levels. I reorganised the kitchen workflow by implementing a prep station system and cross-training 4 team members on multiple roles. I also introduced a ticket priority system to manage orders efficiently. As a result, we maintained our 6-minute average service time despite the increased volume, achieved 96% customer satisfaction scores, and completed the festive period without any food safety incidents or staff burnout.
2Question

Describe how you've led a team to improve food quality standards

When I noticed inconsistent portion sizes and presentation affecting customer feedback, I implemented a standardisation programme for my 8-person kitchen team. I created visual portion guides, introduced daily quality checks, and established a peer review system where team members checked each other's work. I also provided hands-on coaching during service periods and recognised improvements with monthly team awards. Within 6 weeks, customer complaints about food quality dropped by 75%, and our mystery shopper scores improved from 7.2 to 9.1 out of 10.
