1Question

Tell me about a time you had to motivate a struggling team member in a high-pressure kitchen environment

During our busiest Christmas period, one of our junior bakers was struggling with proving times and falling behind on sourdough production. I noticed they were becoming frustrated and affecting team morale. I paired them with our most experienced baker for two weeks, providing one-on-one guidance during quieter afternoon shifts. I also adjusted their responsibilities temporarily, focusing on simpler bread types whilst they built confidence. Within three weeks, they were consistently meeting targets and had become one of our most reliable team members. This approach not only improved their performance but showed the whole team that we invest in everyone's development.
2Question

Describe a situation where you had to maintain food safety standards while meeting tight deadlines

During a particularly busy Saturday morning, our refrigeration unit malfunctioned just as we were preparing for weekend rush. With 200 customers expected and fresh stock needed, I immediately implemented our emergency protocol. I relocated all temperature-sensitive ingredients to backup fridges, documented all temperatures, and adjusted our production schedule to prioritise items that could be safely produced first. I assigned one team member specifically to temperature monitoring whilst maintaining normal production flow. We delivered all orders on time with zero food safety compromises, and I completed full incident documentation for management review.
